Last year was my first year cooking gluten free. This was my first gluten free pie…ever! It was good, but I have learned a couple lessons since! This years pie will be made with Almond Milk instead of Coconut milk. I am hoping for less of a coconut aftertaste. The coconut works great, it just leaves a bit of a coconut aftertaste. I want my pie to taste as much like the original as possible!
Other than that, this is a great recipe! I may get to it and make one today, because after looking at these pictures I am now hungry! 😉
