Ok, so I spend a lot of time changing and working on recipes. This one is one of my favorites! One I adapted and changed from one of my pre-gluten free recipes! I have to say that the finished cookies are just as good if not better than the original.

GFCF Drop Sugar Cookies
- · 1 1/3 cup Gluten Free Baking Mix ( I used GF Bisquick)
- · ¾ tsp baking powder
- · ¼ tsp salt
- · ½ cup margarine or Butter flavored Crisco
- · 1 cup sugar
- · 1 large egg
- · 1 tsp vanilla extract
Preheat oven to 350 degrees F
In the mixer beat margarine and sugar until light and fluffy.
Beat in the egg and vanilla until blended.
Reduce speed to low and add in the remaining ingredients.
Drop dough by heaping teaspoons, 2 inches apart on a parchment lined cookie sheet.
Bake for 10 minutes of until just brown around the edges. Cool and Serve.
Make about 21 cookies depending on the size.
TIP. If you would like to make cookie pops place a craft stick on the baking sheet and place dough on top of the stick.
