GFCF Classic Cornbread

010 In my blogging I have found that I have seasoned cooks who read my recipes, and new cooks. Cooks, who for one reason or another, don’t know how to make classic recipes. They find all of my step by step pictures helpful. This time of year I tend to make the same things over and over! We don’t get a lot of cold weather her in Florida, so I have a limited amount of time to cook all those cold weather dishes. Cornbread is a classic side dish on any table, especially this time of year. It is easy to make. The ingredients are cheap, and it is oh so good! You can make it ahead to make your own dressing, or just eat it by itself. Here is my version.

Classic Cornbread

  • 1 Tablespoon Shortening
  • 1 1/2 cups enriched cornmeal
  • 3 TBSP all purpose flour ( I used GF Bisquick for gluten free)
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 2 cups buttermilk (I used almond milk and 1 tsp vinegar)
  • 1 egg
  • 2 Tbsp. Bacon drippings or melted butter
  • 1 TBSP Honey (optional)

002 Preheat oven to 450 degrees. Place the shortening in a 10 inch cast iron skillet, and preheat in the oven. Read my post about Cast Iron Here

003 In a large bowl sift together the dry ingredients. Stir in the Buttermilk, egg, bacon drippings, and honey. Mix until combined well.

005 Pour the mixture into the greased hot skillet, and place back in oven.

006007 Bake for 20-25 minutes or until golden brown. Serve warm with butter.
